This brisket was too lean. Turned out dry. Only trimmed 1/2 lb of fat off this 20.5 lb brisket.🙁

20lb trimmed brisket Prepped and Seasoned On Traeger at 3:30pm 190 degrees with smoke tube 7pm turned heat up to 225 10:15pm hit 165 (really fast for 20lb!) Let it ride for more bark Wrapped at 12am Cooked at 260 until 3:30am when it hit 204 Also did a bacon wrapped turkey breast at 280 until 165. 3 hours.
